Nebbiolo handpicked and destemmed into open top fermneter where the wine fermented for 14 days. Lightly handplunged daily. Once fermentation was complete the nebbiolo was left on skins for 6 months before being basket pressed into a combiantion of new and old french barriques for maturation...
